Egg Sandwich - Out Of Bread

We didn't want much of anything for dinner.
I snacked on popcorn and dried fruit and nuts.

But then, I got hungry for an egg sandwich.

Egg sandwiches bring with them memories
of when I was a little girl in the '40's.
I can remember my mother making them for me to take to kindergarten.
Or for breakfast... to eat on the way to school.

Oops!... there's no bread.

But, there are hot dog buns.
I can work with that...

Slice the cheese, melt butter in the pan.
Toast the buns.

When the butter sizzles add the egg.
Break the yolk when the whites are cooked, wait a bit,
Flip, turn off the heat, add the cheese.

When the cheese melts, flip onto the bread.

I don't advocate hot dog buns instead of bread,
but in a pinch they will do.

I made a big pot of hot ginger tea for Kristine
because she still has a terrible cough.
I like the hot tea too... helps keep me warm.
It's cold out, but no rain.

~:>
6 eggs
4 were old and floaters
2 were keepers

I found the spot where the Australorp
has been hiding her eggs.

She has a nest up on top of the hay bales.

Crafy little hen.

I love a good egg sandwich anytime and hot dog buns are actually pretty good bread for all kinds of sandwiches. Especially when you lightly toast the buns.

Love egg sandwiches and often have for light supper. I like eggs and crackers too. Ever heard of that?

Thanks for this recipe.
You have a tricky hen there; but glad to hear 2 were good. :)
