Potato Leek Soup

Morgan kinda blends in with the snow and is hard to see in the photo. It was hard to get a photo with her in it because she was running back and forth chasing snow squirrels.

It was a damp cold day. I like the cold weather better when there is a lot of snow. Seemed like a soup day.

I made a super simple potato leek soup by leaving most of the ingredients out. Some of them I didn't want to use (the hot stuff and the spices) and some of them I didn't have (the parsley or cream.)

I washed three leeks very, very well and chopped them, chopped some garlic and added them both to a pot with a couple of spoons of butter. Salt to taste, covered and let simmer low but not brown, for 10 minutes.

Then I added three cups of chicken broth (from chicken breasts, and three chopped potatoes. Covered the pot and let it cook on the trivit on the wood stove until the potatoes were done. I mashed up most of the potatoes with a potato masher. Simple soup.

I think we may be getting a sunny day tomorrow,
or at least not a rainy day. 

Notes: The chickens got out for half a day. Tom got a bale of straw and put it in the shed with the chickens feed he got a few days ago. I gave up on the computer. I would like to mess around doing some uninstalls, but I don't have any re-install disks. So, if I mess up my OS I'm cooked.

oh wow that is a VERY unique coop, like a castle:)we put together an "oasis" for our duck, it was a two tier baby pool with an island and mosquito netting and a tarp tent thing. next, here at our new house, we are going to make her a built in pool with its own drainage system and fake grass!

that was so geeky what i just wrote...

I love potato and leek soup and I'm like you, I'll improvise if I don't have all the ingredients or if a recipe calls for something I'm allergic to.
Now that's a wild coop!

Hi Callie!! A couple of days ago I was deleting blogs that hadn't had posts in a long time, and ones that I wasn't enjoying following, and somehow deleted yours--OH NO!!! It took me a couple of days, but I followed some breadcrumbs, and found my way back to your blog!! YAY!!!! It looks like you've had a busy week, and gotten some snow and eggs to boot!! You can keep the snow, but I would love the eggs! :-) I loved the "frying egg video." I have my Mom's cast iron pan that belonged to her Mother--I never use it, the thing weighs a ton and I think that's becaause of all the "seasoning" it has!

Yum. Nothing better than potato and leek soup when you are cold. Hope it warms up for you soon. We ar cooling a little and still have tropical rain.

We were doing similar things on both sides of the Pacific. The cold weather had me making potato leek soup too last week. Hmm. Good!
I had to hunt around for Morgan in your picture...
